I'll be doing my first pork butt this weekend on my medium egg. What size pork butt will fit? I've got an 8 pounder on order at my butcher, and I'm hoping that isn't too big. What have you guys managed to cook on your mediums? Thanks for the help.

You can fit two 8 pounders on there.

I've done a 16 pound brisket on my medium. You'll be fine.
  • 16 lbs brisket sounds perfect for next weekend. Thanks for the info.
  • I have a medium and always cook 2 butts at a time. They are generally 7.5 to 8 pounders that I stand on edge inside the egg. They will shrink and pull apart while cooking. You can also lean them together teepee style so most of the area is exposed to heat. Cook indirect with drip pan at 250 dome temp for 16+ hours until meat temp hits 195 to 200. Pull and rest for an hour minimum.

Load your lump to the top of the fire ring (above the fire box) allowing maybe 1/2 inch of space between the platesetter. Light in three places (9,12, and 3 o'clock positions) and allow egg to come to temps. Make sure the exhaust smells good before placing your meat, Skatter wood chips/chunks throughout the lump. If you don't have a remote thermometer such as Maverisk ET-73, check on temps throught the night (every 3 hours max.) to verify all is well. Good Luck!

P.S. Calibrate your dome thermometer before the cook in boiling water.
  • Thanks for the info. I've got a new DigiQ II to help me through the night. I will definately use you other advice. Thanks again, and have a happy holidays.

    Morning DarkDreamer:

I have done as many as three butts (all 7 to 8 pounds) at one time and once did two 8+ pound brisket flats at the same time. It just takes a little "arranging" of everything. Civil Eggineer gave you some great advice for the setup. Hope all goes well with the cook (but then being on an Egg, I know it will).

    Have a GREAT day!

It will work just fine. A trick that someone told me on the forum a long time ago is if you can cut something to big up in smaller pieces and pin them togeather standing up with squears to make it fit like I did hear.
