Turkey And White Bean Chili

we made a mad max turkey last saturday cause i did not get to make one on my egg for thanksgiving.. so i took the legs last night and put them into the slow cooker covered them with water and put it on low. this morning i added onion peppers and some great northern beans that had been soaking all night.. well i am home now and the beans are getting done but the chili has not turned that white milky color i have seen with some white bean chili..

so i went looking through the cookbook (i have here on the computer) and seen 8 or 9 white bean chili.. only two of them mention using flour.. neither of them mention using cream or milk or what i originallly thought of when i seen it was canned milk..

so i am wanting the broth that surrounds the pieces of turkey and beans to be white.. what is your opinion should i make a roux on the stove and throw it in or should i add some canned milk??

    the lobster chili i make uses cream. another trick may be to take some of the beans out of the slow cooker and cook them hotter til they break down and add them back in. when im just making beans i always add a smaller variety just to break down and add consistancy to the liquid base. heres the lobster chili recipe

  • Ours turned out clear also after T-giving, so I'll see what others say as well. I'm off for awhile, so you going to be around Monday?

    Terry, Im no eggspert on this but I like where you're going. IMHO, cream does anything good. You could cut out a cup or so from the slow cooker into a small sauce pan to experiment first.

    that lobster chili looks like it would be really good if i was a rockafeller or lived close enough to lobster country.. if i get my hands on a lobster i don't think the wife will let me make chili out of it :laugh:

    but the cream kind of leads me back to where i was.. but i am liking the bean thing so far thanks ;)

    its about as cheap as pork butt last time i bought it :laugh: not good for the lobstermen. thing with the chili is 3 or 4 lobsters makes enough to feed a good sized crowd and the bland northern beans pick up a really nice seafood flavor :)

    must be nice i can buy pork butt and feed a nice crowd or i can take out another loan and feed the lobster :laugh:


    it does look really good... tell you what if i ever get up your way i will buy some lobste3r and let you make the chili.. cause if they are as cheap as pork butt i will be buying more than four B)

    I think the problem may be that you should have used chicken broth instead of water...I think adding some cream at this point is ok but may change the texture and make it more like a cream of turkey & bean soup...not that there is anything wrong with that... :P

    ok here is what i did i we3nt to do fishlessman's idea of cooking the beans and i figured why not just use the immersion blender.. i was going to do that till i started scooping i found out how hard it would be to just get beans. sooo...


    i used the potato masher and scooped it into a bowl and mashed away. well the meat did not get all mashed up and i have a wonderful white bean chili now thanks guys for all of your suggestions

    When I make a quicker white bean chili (canned beans); I drain and rinse all 3 cans but puree one before it goes into the pot. No matter what the heat level from peppers, I typically add a little cream or half and half at the end. It seems to smooth out the flavor. Good solution.

    i may try that next time.. i have never used cocomut milk before that i can remember but if you say it is good i will give it a try ;)

    a chicken lobster is a little 1 pound lobster, supposed to be sweeter but thats a wives tail. when doing that recipe i would start with atleast a couple pound and a half, preferably two 2 pounders.
