Holding temperature

What would be the cause of the egg not holding the correct temp? For instance, clean egg, new charcoal(Green Egg Brand)started the Boston Butt at 5 p.m., got the Egg to 220, it fluctuated between 210 and 230 until 10:00 p.m. where it was honed in at 220. Woke up at 5:00 checked the temp, Egg was 150, meat at 118 and probably ruined. Any suggestions....

Your meat is probably OK if you mean 118 internal. You are most likely trying to maintain too low a temp. Try it at 250. You may need to wiggle the lump with a coat hanger through the lower vent.
