bluefish

went Striper fishing today and took home couple of large bluefish. Anyone have
a good bluefish recipe. i always heard it was good smoked?

    Stones.....Yes it is good smoked...but if you really want a treat, GRILL it!! Grew up with bluefish as a staple....

    Cut the fillets into decent serving size pieces, skin ON. Brush the flesh side with a coating of mayonaise, and season simply with salt and pepper. Get grill good and hot (as if you were cooking a steak) and place flesh side down. Allow to grill flesh side down approx 3-4 minutes, or until flesh releases itself from the grate. (It will release easily when it is time to turn...trust me!) Flip to skin side, and finish cooking through, till fish flakes easily with a fork. Slide spatula between flesh and skin....leaving skin on grate, and serve! Squirt with a bit of lemon juice at the table.

    Bluefish is a very oily fish....and lends itself well to direct grilling. The mayonaise will reduce the strong flavor.

    You can smoke it too, but please try the direct grill method....it really is a treat IMNSHO....wish I had some here!!! :(

    ok . I have a few extra fillets so i will give it a try. Should i grill on egg or use
    the gasser?

    Some people like them. Try it and see for yourself. Almost as good as Possum. :whistle:

    LOL!! You haven't had your Egg long....lol...or this wouldn't be a question.... :laugh: . Our gasser just stores Egg stuff now...but for now it's up to you, but I would go with the Egg.... ;):)
