I have been cooking my Thanksgiving turkey on the grill for years (Weber Gas), but this will be my first using my XL Egg. In the past, the rule of thumb was about 5 hours (give or take) at ~325...can I assume this would hold true on the Egg?

  • I did a test run last weekend. 5 hrs right at 350 for a 20lb bird. It was perfect. I used a plate setter, grate and a v rack in a pan. Rubbed it down with real butter, rosemary and assorted spices. Shoved a cut up apple and lemon with some white wine in the bird and never looked back. Did a couple of peeks and checked the temp around 5 hrs.
    Best bird i've had in years.

    NEVER EVER COOK TO TIME. Time will bite your ass every chance it gets. Cook to temp (breasts at 170, thighs at 170-175)

    Use time as a guideline as to when to start checking temp. In the case of turkey it's 12-15 minutes per pound. Use the low end if not stuffed and the high end when stuffed.

    Thanks...and yes, time is just my guide as to when to start paying attention to the thermo, although my new one has a remote alarm.
