Turkey dry run

Picked up my fresh, natural NON-INJECTED 20# turkey today from "The Fresh Market". I just finished doing a 'dry run', setting up my large like I will for the cook Thursday. Platesetter (feet up) on the fire ring, spacers (4 aluminum foil balls), an aluminum roasting pan (gonna get a real one next year), the V-rack and the big ole bird - Gobble, gobble. Everything fit nicely with room to spare in the dome (including the thermometer).

I feel better now not having to worry about that part. Just the gravy, ya see, though I've made roux's before (for gumbo) I've never made gravy and this is for 26+ people. I'm going out on blind faith, and Mad Max's fantastic instructions!

    Sounds great Clark. Don't worry about the gravy, it's a pretty simple process. I have made gravy many, many times and it is fun when you realize how easy it is. On T-Day I will volunteer to make the gravy just because so many are afraid of it. Just remember, if there is heat under it, you are stirring it well. Recruit someone to help stir it and make sure they do a thorough job. Also, if you can feel it starting to stick to the bottom of the pan at all reduce your heat a little and lift the pan off completely for a few moments and keep stirring it. Where it started to stick will dissolve back in to it. Walking away from gravy and to much heat are probably the easiest ways to screw it up.
    Once you learn to make one gravy you can make any gravy, for roast beef and a Yorkshire pudding, for leg of lamb and roasted potato's, for Sauerbraten and spaetzles, for chicken and homemade biscuits, gravy is gravy. I'm sure you will do great.

    I have the best of T-Day plans, all I have to do is show up. LOL. Have a great Thanksgiving.

    I hear ya about T'day. That's all I'm doing on Thursday, but since the in laws are doing their big dinner on Saturday (and I'm doing the turkey for that), and since duck season opens on Friday am, I'm going to cook my turkey Thursday to serve on Saturday.

    I don't know if you watched or not, but Mad Max made his gravy at Freds Music and BBQ. They have the videos posted on their website. Maybe watching the video along with the instructions will help you sleep better tonight!
