Got to thinking about rice. I have done some on the egg and it's been good. I thought, why do I need to boil and steam when the egg is pretty much a big kettle?
Some rice, chicken stock, thyme, allspice berries, peppercorns, lemon and lime zest and some nutmeg. I had no Scotch Bonnets so a couple of long reds had to do. On the egg at 4-500* no glasses

When most of the water went away I added some black beans and liquid and closed the vents

Really good flavour

Molly,
Really easy and quick way to do rice. The rice ended up al dente and the beans still had some texture.

Boss Hogg,
They would have had a bit more kick with Scotch Bonnetts but they were still good. Way quicker than traditional rice method.
