Before you got your egg, how did you all used to cook your turkey?

My mom did it in a paper bag or a she always used a new white tee shirt to cover the bird and baste it.

For all the years I did it, I found those turkey bags works perfect. The turkey would just about boil in its juices on the bottom and the skin got perfectly brown. Of course I always had a stuffed turkey then too.

325 stuffed with a bells seasoning sausage stuffing is has always been the family bird. dont think they sell bells outside newengland. back when doing them in volume found the meat pealed off the bones easier for carving 20 or so birds if cooked upsidedown.

Same way I do now, except in an oven.. Ohh and I use the ice bag trick now..

In 40 years I only ruined one. I tried to smoke one on a chargriller.. Evil device..

Thy sell it in NY.. Great stuff. I have my supply down here.. :) though I am running low..
  • basically the same way i do it now....just in the oven....hit on the ice bag trick about 12 years prior to getting the egg. ...before that i did try the 'fad de jour'....paper bags, breast side down, baste through the terry cloth towel, etc. . .all worked with varying degrees of success. ...i was taught at an early age though to baste baste baste!!!. ..that has always stuck with me for whatever reason. ...guess i just reall like how all the juices/butter/wine mingle together that way. ...

Did you see the Turkey Throwdown with Bobby Flay? I wanted to tell Flay so she answered Butterball's hot line for years - Max has a cult following...

I've grilled a turkey just about every year for the past 15 years. Pre-BGE, I did it in a Weber kettle. The Egg is sooooo much easier.

When we lived in Reno my Mom cooked a turkey in a paper bag...
coat the inside of the bag thoroughly with Crisco

put the turkey in the bag and seal up the bag as tightly as possible

put the turkey in a roasting pan in the oven

if it was a 12 # or larger turkey you cooked it for the first hour in the oven at 500 degrees, 2nd hour at 400 degrees and 3rd hour at 300 degrees...it was delicious..

You really need to stop using the flat view

    :woohoo:
  • yeah, i did see that....what was that apricot jam thing???

and when they showed her slicing the breast, did you see how it crumbled...geez, just a little dry!!!
  • i learned how to do it (as i recall) using your basic grocery store paper bag ....rub butter all over the bird, aromatics in the bird (kinda like i do now) ...bird in the bag, wrap the opening tight, and roast it at regular temps (325) ....worked pretty well as i recall...you could open the bag up the last hour or so to allow for browning....
  • In a Weber for 30+ years.

I never cooked a turkey before trying it on the BGE. But I did read the forum for awhile. I contacted M. Max and we exchanged a few emails. He was kind enough to answer all my questions. I did one trial run two weeks before The Day for some LE types who are anything but bashful and they raved about it. Cooked for my wifes whole family on the holiday, and this is now the only way they want to have a turkey prepared. Of course, I do require a heck of a lot of help from my wife getting everything ready to cook.

Last few turkeys were fried in the turkey fryer.

Since we are going to Brother-in-law's house for Turkey Day. Will have to look forward to making a turkey from now to the New Year.

I was looking forward to making a turkey.
