Great job Max, it's the best turkey ever! I really appreciate you giving your time to help our fellow eggheads. Your turkey has become tradition at our house. This year, I think Kenny will cook it all by himself. He may need to use the hotline.

As a relative newbie (2+ years egging), I just want to say thanks, Max. I've done MM turkeys the past two Thanksgivings and they have been great. And, for anyone else on the fence about whether to do this, it really is as easy as Max makes it sound and it truly is delicious.

Under 24/7 watch at home right now. He is walking and talking a little, no idea on long term effects. No sports for a year if ever again. He is one lucky kid.

Sunday was very uneventful, we laid in bed and watched football all day and had room service deliver some god awful food. Should've went to Wess's for breakfast and leftovers. :(

I think i'll do a test turkey this weekend. They're pretty cheap right now -
It's good to be able to learn and try new things from EGGers like you. My wife gets a 20-24 lb bird from work. The sad thing is we always go to her brother's house for T-Day every year and what makes it worse it is at 12 pm. Too F---en early. Anyways might do the turkey on Friday or Saturday. Will do your method.
Now with your method, is the turkey being smoked, roasted, or is it a combination of both ? Also, have you heard of DRY BRINING ? There was a article in the LA Times Food Section on it.
Anyways, thanks for the MMT tips.

its a traditional roasted bird that benefits from the 'magic' of the egg ...you will get only as much smoke as you decide you want by the application of some wood (you don't need much). ... a chunk of apple, cherry or pecan will impart just a nice of hint of smoke to the finished bird. ...
