Too late for the Throwdown...

Morning All:
Didn't have time this weekend to put together an entry for ThrowdownV, however, tonight's dinner may have been eligible as "something stuffed".
French cut rack of lamb, stuffed with lemon slice, mint leaf and garlic slices in slits in the rack, with a little salt & pepper...

Then on to the small Egg, direct at a dome temp of about 450...

After a few minutes and a couple of turns, off they came with an internal temp of 138 to 142...

Let set a few minutes, then slice into "lollipops" and top with a sauce made from Sweet Vermouth, butter, mint leaves, lemon juice & scallions (salt & pepper to taste)...

Added some Zatarian's Caribbean Rice as a side and this was one very tasty meal.
Not sure how it would have done in the Throwdown, but it would have been very difficult to top Faith's winner.

That was a beautiful cook. I'm definitely adding this to my to-do list. Love lamb with garlic and I've never thought about stuffing a rack like that.
Nice rack, so to speak.
