Stuffed Buffalo Pockets ... (throwdown entry)

A bit more on our stuffed buffalo pockets ... it was a total experiment but came out pretty tasty.

We took buffalo meat and ground it, seasoned with a healthy tablespoon of spicy steak seasoning and chopped shallots then sent it through the grinder a second time. Formed into two half pound patties stuffed with smoked cheddar and diced up jalepenos then hit each side with salt and pepper.

Seared the patties on the cast iron skillet on the small (was a bit loose, should have used a binder, couldn't go direct on the grate) ... for about two minutes on each side.

Let cool for ten minutes, placed thin sliced pickles on top and wrapped in thinly rolled puff pastry. Eggwash and onto the large, indirect at 400 deg for a about 15 minutes. Hit the top with ketchup and mustard .... intent was to eat them like a bunless burger, but the bottom got a little soft ... so we called it a loaf!
