Sweet potato fry pie

Left over sweet potato fries from last night's dinner, cut, fried to crisp up, then onto a plain pie with an extra shake of pineapple head & some olive oil, little horsy sauce on at the end:

You always do such great pies. Have you made a tutorial and I have missed it, or is it in the works, type dough rest cure etc?

Richard, I have done a slide show which gives the basic dough recipe, I use this for just about everything. You can start with this then modify it, age it, refrigerate it & so forth to get what you like, but right out of the gate this step by step process will get you pretty good results:

I tried your dough a couple of weeks ago and will do it again. My first try yielded one sticky dough...do I just add more flour?LBGE Katy (Houston) TX

Barry, you can adjust the flour if it is too sticky, but you want it a little sticky, roll into a ball then coat in flour before you go to the container to rest, this increased moisture will give you a better texture when you bake it later on, makes it a little trickier to work with but once you get the hang of it you will appreciate the results, Marchappy in the hut
