Rookie Mistake ??

Hello fellow eggheads,
I'm quite new with the Egg. I've cooked chicken, burgers and tried a brisket last weekend and all truned out well. Then came they Pork Butt
The cooking is not going as I eggspected. I stoked the egg up at about 9:30 last night. Got a great bed of coals going…..tossed on some Hickory….set the platesetter in position… placed the butts on the grill rack at 10pm. Got the temp stable at 230 and made sure it was stable for a good two hours. Went out to check at 7 am and the temp had dropped to 140. At this point the meat was a 137. I had to remove the meat and stoke the coals to get it back to 230. . A real bummer. Then by 10:45 the meat temp went right past 160 to 169 and still climbing. It’s like it passed the collagen melting point…. Any thoughts ?

230 is a little hard to keep all night with keeping an eye on things.
I do butts at 250 and I make a night of it, watch a little tv sleep have a drink watch some more tv another drink and I like it that way just me and the dog with no one to tell either of us what to do.
I don't think the quick run through temp is a problem.

The egg will cruise all night at 250. At 230 dome you are cooking at about 200 at the grid level. That is too low.

I did my 1st butt couple weeks ago read directions on Third Eye's site, to a T from cleaning the egg to building the fire. Was nervous going to sleep, but turned out perfect. Hardest part was not peeking!

I agree. I have done a few butts @ 250 all night without even thinking about checking on them. Maybe I have just been lucky so far, but once it get stable at 250, mine will chug all night long. I have never stayed up, or lost sleep worrying about it.
