Tarragon Steak

If I want to season a TRex'd steak with fresh tarragon, should I do so before or after the sear? Would it make a difference if I used dried tarragon? Not sure if I still have any fresh, but I do have some dried hanging in the kitchen. Seems like the sear would just burn either.

Or should I just have pizza? :)

I hate it when I go to the kitchen for food and all I find are ingredients!

  • After burning seasonings in the past, I only put salt on my steaks before a TRx sear. During the 15-20 min. rest between the sear and the roast, I add whatever seasoning I desire. Works pretty good for us!

Thanks, Clark. That's what I figured. I haven't TRex'd yet with fresh herbs so I wanted to check before I ruined one.
