A Psychedelic Evening.....

Started with portobellos on The Mini with mozzarella, ricotta, sun dried tomaroes, mi amigo Richard's Indian River Spice Blend & the stems..........

Came out the best of all last night I think this have been my best no doubt........

Loren baked some cheese & potato Empanadas & added pesto.....

....& also her delicious baked sweet potatoes with alioli & chipotle sauce.........

...Fired up the large,,,,,,,the sun was just setting.......

...started preparations sea bass...EVOO, Chef Prudhomme's, & shrimps with mustard, death by garlic & red pepper flakes.......


The fish was great.....overcooked the shrimp... :evil: ...


Now "Hang Loose" you "Beautiful People"...Decided to try out our Woodstock "Far Out" "Threads" for a 70's party we're having soon........here you have Heart of Gold Disco Girl, Purple Haze Pimp & Flower Child.......Groovy man......

The shrimp looked fantastic. From this end, we could not tell they were overcooked.

HAHA...love the 70's garb, mi hermano!No surprise that Loren is beautiful as a blond too.

The food looked great. I would love to get her recipe for the baked sweet potatoes with alioli & chipotle sauce. We eat a lot of sweet taters and those look awesome! Great job Beli! -

Here you are....
Sweet Potato Frites:
11/2 pounds sweet potatoes (about 3 large ones)
1 tbs olive oil
11/2 tsp ancho chili powder
11/2 tsp paprika
11/2 tsp kosher salt
3 tsp fresh grated orange zest
Chipotle Aioli
1 cup mayonnaise
2 tbs fresh lime juice
2 tbs brown sugar
1 tbs chipotle peppers in adobo sauce, finely chopped
1 tsp ground cumin
Combine Chipotle Aioli ingredients in small bowl. Serve as topping for tacos, burgers, or as dip por sweet potato frites. Makes 1 cup
Preheat egg to 450 F Cut potatoes into 1/2 inch wedges, transfer to a baking sheet & toss with oil. In a small bowl, combine chili powder, paprika, salt & orange zest. Toss oiled potato wedges with spice mixture, spread into a single layer and bake for about 30 min. , turning occasionally. serve immediately with Chipotle Aioli for dipping.
