It was a rainy, chilly Veteran's day here in Lawrenceville so I cooked a few things...

    Nice cooks! I did a turkey and white bean chili last week and it was great. Going to do more healthy stuff. Where did you stay in Myrtle? Brianna has a competition there in June.

    Steven we always stay at the Marriott Ocean Watch in N Myrtle Beach...they have 2 bedroom condos & a Marriott hotel right next door....and if you have time I can recommend a good inshore fishing guide... :)

    Mom's Sweet Potato Pie

    1 stick butter melted & cooled
    2 1/2 cups cooked & mashed sweet potaoes & cooled
    3 eggs seperated (room temparature)
    2 cups sugar
    1/4 tsp cinnamon
    1/4 tsp nutmeg
    1 tsp (DP Pineapple Head) optional
    1 tbsp Vanilla
    1 tbsp Lemon juice
    1 cup milk
    2 9" frozen pie shells
    dash of salt

    Beat egg whites & dash of salt until stiff and fluffy and set aside.

    In a large bowl combine sweet potatoes, egg yolks, sugar, cinnamon, nutmeg, DPPH, vanilla, lemon juice, milk & butter.

    Gently fold in egg whites. Pour batter into thawed pie shells. Bake on BGE at 350 indirect with platesetter & pizza stone for 55-60 minutes. Rotate pies twice during cook to avoid hot
    spots. Pies are done when tops bounce back when touched. I also like to put DPPH on top of the pies after pies are done....sprinkle DPPH lightly... Enjoy...
