With the help of those that answered my thread below about the old forum recipes and post I was able to find this thread. Hope it might help someone.
WooDoggies post in there is very interesting but it's a 3 day process.

Wow, that is an old post... forgot all about K.O.C.'s technique.
If I were going to brine a whole chicken today, I'd brine for about 6 hours, rinse, pat dry and let it dry on a vertical roaster in the fridge overnight. The time in the fridge really does dry out the extra moisture in the skin.
I'd do away with the olive oil and apply the rub straight to the skin and roast the same way from the original post.
Here's a photo from about the time of that old post... using the brining/air dry technique.
It does make for a good chicken.... thanks for the blast from the past!
