Blueberry Pancake Fatty

Well, ever since I had a taste of the Blueberry Pancake Fatty that Ron made at EggwegoFest, I've been meaning to give it a whirl. Did so yesterday morning.

I didn't realize Fatties were supposed to be cooked low and slow, and instead did it in about an hour at right around 400 degrees.

Blueberry pancakes (with an extra half cub of milk so they'd be a little thinner) rolled up in sausage, with a maple syrup glaze on it. Honestly, I should have gone with a few more coats on the syrup, wasn't as sweet as I wanted it. But on the whole quite tasty and a heckuva breakfast.

    Looks very good and tasty...especially for someone like me who loves BLUEBERRY pancakes (or blueberry anything).

    However, some confusion...do you cook the pancakes first, then roll them into the sausage or is it just batter in the sausage?

    Man, that looks good Teach. Instead of more coats of syrup how about if you butter and syrup the pancakes as if you were eating them normally before you make the fatty. :blink: :lol: :woohoo:

  • newbie question on fattie,,,,,,,, do you use bulk sausage, then put blue berry pancake batter on top and then roll up, sounds great

    For these, I cooked the pancakes like I normally would, just keeping a very close eye on them so they don't get too brown. Didn't want a bitter taste to be in there.

    Buttering and adding some syrup to the pancakes before rolling up would have worked just fine too! Good call on that.

    Since it wasn't as sweet as I wanted, I just poured a little syrup over the top of the slices and then it was perfect.

    And yes, outragous, just grab a roll of bulk sausage, put it on top of some clear plastic wrap, smash it flat and into a rectangular shape, and then add a layer of blueberry pancakes. Then, roll that sucker up! Use the plastic wrap to make it nice and tight and close up the ends with sausage. I chose not to do a bacon weave on it.

    One tip that someone suggested on a different board, take the pancakes and cut off the edges so they look like squares. Very easy to lay them end to end and cover the sausage with a single layer.

    Tasty tasty. Son is eating leftovers from it for dinner right now!

  • Do you think that cooking it low and slow would have resulted in a soggy pancake from the sausage grease? Or would you do it indirect at say 250* next time?
