Proper turkey size

I have a large green egg. What is the largest turkey that you recommend? I plan to lay the turkey in a foil pan and use a plate setter, unless someone has a better way to do it.

    1 The Small EGG will hold a 12 lb turkey.
    2 The Medium EGG will hold a 18 lb turkey.
    3 The Large BGE will hold a 20 lb turkey.
    4 The XL BGE will hold 2 - 20 lb turkeys.

    I've heard 20 lbs on a large - largest I've ever done was about 17 lbs.

    Watch that your thermometer doesn't touch the bird.

  • I've done a 21/22 lb before on a Lg. The best turkey I cooked on it was around 16 lb, though not sure it had to do with the size..maybe..
  • I have done a 20 pounder a few times. I use a foil pan and the BGE Rib/Roast Rack. Use the platesetter feet up, but put the pan and rack directly on platesetter and the thermometer should not touch it.

    I have done a couple or 14-16 lb. turkeys on the upright rack. I removed the fire ring, putting the platesetter (feet up) directly on the fire box. I put the turkey (on the roaster) into a round drip pan on the platesetter. The turkey came almost up to the top vent, but did not touch the temp probe.

    Worked great and I just received a request to cook one for the inlaws for Thanksgiving.

    Over the years I have kept track and to date my largest bird on my large BGE has been 24.5 pounds. I never use my plate setter, but instead use a pan to provide the indirect protection with the bird resting on it's back by using a small raised rack to keep it out of the juices. One big hint I can give you is if doing a big bird is to remove that metal clip from inside on your dome thermometer so that you can close the dome and then re-insert the thermometer so as to not impale or bend your thermometer...then just remember that when you open and close again!

    Thank you!...I forgot to mention to then take that stupid clip to the trash! It is not needed and only causes other problems. Gravity will hold your thermometer in the hole!

  • NO, don't put your pan directly on the plate setter as that will result in scorched/burned drippings...you want some air between your plate setter and your pan. ..see my instructions at the mad max turkey central. ..use the green feet, balls of aluminum foil, copper ells, something to create even a little bit of airflow.. .you can stll get a 25pounder in there with ease that way
