first bacon turned out GREAT!

well, my first project for my new BGE was to smoke some self cured bacon, and I can't believe how well it went! The egg came up to temp and simply stayed there once I closed the vents to maybe 1/2 or less of an inch! Simple as that! No adding coal, no nothing. Just kept an eye on the temp and on the internal temp of the bacon, increased the heat a bit to 300 since dinner was ready and I was getting tired, but wow am I impressed. Also made a wonderful pizza and a tasty juicy tri-tip and pork tenderloin, more to come this weekend! I think I'll put that leg of lamb in my freezer to use :-)

    Theres a local place that claims to Grill/BBQ over almond (Yes out in the land of fruits/nuts). The BBQ is fake (aka if you put BBQ sauce on something that doesn't make it BBQ) and the grilling doesn't seem to pick up much actual smoke or flavor from the almond wood they claim to use :( . So I too am curious how actual smoking with almond wood works out.
  • the rancher where the pig came from suggested the Almond wood, that's what they use (as they have the trees). Turned out really nice.

  • worked great, like any other hard wood. I got two branch pieces, maybe 10 inch each and about 2 across. Cut some 2 inch or so slices off one and broke those into smaller pieces, soaked them and just put them on the coals. The smoke had a pleasant "camp fire" smell to it and maybe two of the chunks got mostly smoked away. Very nice taste. as far as i know you can use many hard woods, lots of fruit and nut trees are good. Don't know if all are good, might be worth experimenting by just making some smoke with different woods, if it smells pleasant it'll probably be good?

    I'd have to do a side by side to compare with other woods, but then I'd either need to make this a day long operation or get a 2nd egg (hey, there's an idea!) and I don't have either :-)

    Don't know where you live, but if you can find somebody with an Almond tree, it's worth asking for a branch.
