ready to go, plan is 225 dome for the first 3 hours then bump to 250 until they are done


Went on about 11:30 and guess is about 7 hours but they're done when they're done
Also first time to try the Carnivore sweet sauce, can hardly wait.

Looks good so far! Would like to see the finished results. Just curious, you don't trim your racks down? I normally trim them St lous style.. Although i normally ended up throwing alot of meat away.... I'd save the trimmings in the freezer then throw away 6 months later... :( But this past weekend i finally cooked the trimmings up and threw them in some beans. Came out pretty good.

Not to a true St. Louis style but I do trim them. If you look at the pics the lower level has 1 slab and trimmings with 2 slabs and the rest of the trimmings on the top. Was going to save the trimmings for future baked beans but I've already eaten most of them

Nice looking cook. Wally world in the super center in Viera is having turkeys on sale. $.40/lb for 12-15 pounders and $.60/lb for the 20-22 pounders. Just got 2 smaller ones and will probably get a few more limit 2 per trip.
