Marinade with Tequila

While in KC this weekend, caught a segment on a local station about marinating with tequila but the cook
mentioned something about a certain type of tequila to use. Is there that much difference in tequila to use for a beef (skirt steak) marinade?

I'm not sure about the different types of tequila but we have done tequila lime chicken a number of times and it is great! Pretty much just use whatever we had on hand at the time.

I've often wondered about those bottles of tequila with a worm.. and wondered, and wondered, and wondered... If you wanna get sick, do you really need the worm!? Seriously, I've heard of "drunken" shrimp" where they swim around in a bowl of vodka before being consumed uncooked... although some folks cook them first! I often use Cognac for pizazz when I'm sauteeing a steak with 'shrooms' and I've gotta believe that tequila would work with many dishes... 8 - )

I use cheap Tequila to cook. :blink:Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

Don't call me loco, but I prefer to marinate myself with a good tequila while cooking the skirt steak. Or cooking most anything else.
Or, other times when not cooking anything. -
I have found that to marinade with the cheep tequila, you just want the alcohol and some flavor, and drink the good stuff is a good combo. The worm is not bad but by the time you have drank enough tequila to get to the worm you don't care.

Chicken, Margarita
Living in New Mexico every day is reason for a party. Margarita chicken is a family favorite and is quick and easy to do.
INGREDIENTS:
The dry ingredients:
2 parts Lime Pepper mix
1 part Chipotle
1 part Roasted garlic with Bell Peppers mix
The wet injection mix:
2 parts Olive oil
2 parts Sweetened Lime Juice
1 part Tequila
Procedure:
1 Mix the wet ingredients together and inject into all parts of the chicken.
2 Mix the dry ingredients together in a bowl and dredge the chicken on both sides with the dry mix. Place the chicken in a preheated smoker @ 225 degrees. Cook till an internal temperature of 180 degrees is reached.
4 Let chicken rest for 20-30 minutes after pulling form the smoker.
5 Chicken will have a semi-crisp skin and should not be burnt.
6 Inside of the chicken will be slightly pink (from the smoke) and be very moist and flavorful.

I used to agree with cook with the cheap stuff and drink the good stuff, except I always had to end up drinking the cheap stuff. So now I cook with the stuff I drink. -

There are basically 4 levels of tequila, 1. Pulque; 2 mezcal; 3 tequila; 4 the high end stuff. Sll start with the agave plant and the degree of distillation and processing is the difference. Different varities of the agave cactus are part of the different levels of quality. The little worm is found in the agave cactus plant and added to some brands of mezcal.

The worm is a marketing technique to get the gringos to buy the tequila and it works..
