"Paella" pans

I thought this was interesting. In searching on the Typhoon pan, I came across this web page:

Wal*mart and Bed Bath and Beyond apparently carry paella pans, or the similar types like the Typhoon. Who woulda thunk it?

Tnw, If I was shopping for a paella pan or a wok would it be best to get one that is coated or not coated? Tim

And off topic is there a well made meat injector?

What brand and where?

Because my walmart injectors will not screw together or poorly made!

I doubt if the non stick coating would hold up in the egg for any length of time.

The "authentic" paelleras are the inexpensive carbon steel models with a flat bottom and angled sides. That's what I use. They season over time. I wouldn't get non stick for use in the Egg since I'd suspect that the coating wouldn't take the heat over time. I've not regretted the choice of the "authentic" pans. One thing I have read is that the pan should be relatively thin and should not retain heat. When you remove it from the fire you want it to cool down quickly. So any of the pans that say they are heavy and have good heat retention, I'd stay away from, at least for making paella. good luck!
