First EGGED Rice Dish

...been doing this for nearly 28 years in same pan...inside on the stove, 4 different addresses, 2 states...first time on the BGE!! Turned out SUPER! Thanks, Ku

Well, for Pete's sake..... cough up the recipe. I have a 25 year old pan, so I'm ready to try it.Happy Trails~thirdeye~Barbecue is not rocket surgery -




brown sausage in EVOO on raised (egg feet) heavy pan, direct
add onions and garlic and small diced tomato, then dried thyme, oregano, and crushed reds, then add and saute 1.5 c basmati rice

deglaze with some white wine, then add some "defrosting water" from seafood and saffron/wine mixture



covered with HDAF for about 10 minutes with lid closed, then started adding all that seafood and a bit more white wine
and some slice red bells and frozen green peas
covered again with HDAF, about 10 minutes later, clams had not opened, so some H2O went in and lid left open with HDAF on top, loose
finally done and quickly consumed!!

remember when "Juan" sprained his wrist from all that King Crab on top??? -
Still looks like a beautiful paella, perhaps aborio rice instesd of basmati. It absorbs the liquid better. Basmati likes to be fluffy and semi-dry.
