Stir fry

Don't often use the wok on the egg but this was good.
Cut up some vegetables, vacuum marinated pork tenderloins in teriyaki, ginger, lemongrass, garlic, green onions and sesame oil.


Seared the pork on the egg just until charred, removed, sliced and replaced in the marinade

Stir fried the veg a bit

Dumped in the pork and marinade and added a good dose of fish sauce

Then the noodles

They were rice noodles I had soaked in boiled water for three minutes and quick cooled.

I love pork tenderloins, inexpensive, tender and they will take on about any flavor you want to give them. I guess I’m going to have to break and buy a wok or maybe give out a hint for Christmas.

woks are real cheap, take the plunge. in downtown boston i bought a 14 and a 16 inch wok for a grand total of 22 dollars. now you can pay more, but your paying for the handle or a material that you dont want or need.

Those were a wide vermicelli. Three minutes in boiled water. For the real wide ones like pad thai go to four minutes. For the fine ones put the noodles in a sieve and dip them in and out of the water until they are limp. In every case cool them in icewater. All of them should have a definite crunch when you bite them. I know what you mean about the labelling. That pack had no english at all. I've made a lot of mush with rice noodles but when you get used to it they are pretty easy.

Thanks. I have done a few on the egg but didn't really see the advantage over the stove. I do pad thai a lot. This one picked up a nice flavour from the lump.

That looks really delish. How long did you marinate the pork and do you think it made any difference? I don't usually marinate very long for stir frying, especially a tenderloin.

It was about two hours. I was grilling one and using one for the stirfry. The vacuum marinade cuts off about 60% to 80% of the time without it.
