BBQ Chicken Breast

I decided I need a change and had not had chicken for a long time. While at Sam's I found some chicken breast that they were marking down as I watched. $9.20 for 6.25# sounded pretty good for bone in, skin on breasts and they looked good, 7 in the package. I used the FoodSaver on 4 and held 3 out. I rubbed them with sea salt, black pepper, a little garlic powder and John Henry's Butter Pecan Rub. The egg was set for a raised grid and my fire was a mix of Royal Oak and Mesquite charcoal. When the dome reached 450º I tossed in a few chunks of pecan wood. I let the egg regain 400º and added the chicken.

They were getting a good char a little to fast so I moved them off to the side.

These were some of the best chicken I have had yet. I like the char and rich, sweet sauce. They had just the right amount of heat to them and were some of the most tender, juicy and flavorful chicken I have ever had.

    We love dem split breasts.Schnucks has them on sale for $.87/lb. this week.I'm fillin the freezer.Egged split chicken breasts make the best chicken salad in the UNIVERSE!!! ;)

    I buy em up on sale,cook a couple for me and Mommy-o,cook a few xtra to pull for chicken salad, especially in the summertime.OMG,you gotta try em! ;):whistle:

    Hey Steve,

    These have plenty of color, LOL, almost too much but they were not dry at all. 400º did a pretty good job on the skin. The final internal temp must have been about 160º-165º. When I moved them off to the side of the grill I turned them so that the thickest meat was on the side toward the fire so not to dry out the thinner parts. The juices were nice and clear and almost dripping from them. Dark meat I would have gone for a lower temp, 325º-350º, and a higher internal, 175º?

    I hope I can reproduce this in the future. :cheer:

    Nice.... I had given up with chicken till I got my eggs. Now I can cook chicken.

    Morning Bill,

    The char really offsets the sweet of the sauce, I love it also. This is the first time I have done breast at this temp. I am beginning to think that the key to great chicken is the dome temp or is at least one of the key ingredients.

    Thanks Mickey, I used to be able to do a great chicken on the old Weber I had and switching over to the egg has had me puzzled. I think with the egg we watch temperatures a lot closer. With the old Weber if it was hot it was ready.

    Thanks Barry, Yup, I can still say "I quit!". I still crave the smokes after almost 7 months but all I have to do is look at the price and I am turned off. At over $5 a pack and almost $50 a carton my 1.5 to 2 carton a week habit is history. It's pretty simple, I know I can't afford them any more. If they ever roll the prices back to what they were when I started I'm in trouble. When I was a teenager in N.H. (tax free) I could buy them for 15¢ a pack!

    Looks real good Gator. Nice job. Wifey would eat the hell outta that chicken. I prefer the legs and thighs, that's just me though.

    Thanks Steve, It's a real bear but I got totally stubborn with myself and kept reminding myself how much effort I had invested in quiting. I found eating smaller meals helped a lot. If I ate till I was satisfied I would want to light up a smoke. Changing some of my other routines helped. I would place myself in situations where I wasn't allowed to smoke like in public buildings. I renewed my drivers license about 6 months early just so I could park my carcass at the DMV, LOL. That killed an afternoon and the rates were going way up so I saved a good sum also. I would crave a smoke and go wash and wax the car, it was getting the treatment about once a day for a couple months there. I have one of the best looking 93 Honda Civics I know of! I was always looking for ways to put myself in a non-smoking situation. If you can get help from your doctor, I hear some of the new pills are great. My doctor wasn't much help (long story) so I had to go cold turkey, which is do-able but any help you can get is a plus. I have heard of hypnosis that sounds fantastic. Support from everyone here was awesome. Good luck and let the forum know so we can offer support, it does help. The only person that can do it is you but you do not have to do it alone, so I found out.

    Thanks highpress, I normally go with the dark meat also but I got this marked down and at the moment any chicken was looking good. These breast stayed amazingly moist and tender and have good flavor.
