Looking for a good meatball recipe for spaghetti and meatballs. Would like to grill the meatballs in egg. Would like to have lamb, beef and pork in the meatballs.

    How about meatballs wrapped in pork, then added to your sauce? You don't see that everyday.

    I go 3/4 pork to 1/4 veal. Dehydrated onions, chopped garlic and fresh parsley. I drop half in the sauce raw and grill the other half. I do the same with sausage.

    Any combination of ground meat will work with this recipe.

    INGREDIENTS:
    2 Lbs Turkey, Ground
    1 Large Onion, Chopped Small
    2 Whole Eggs
    1 Cup Favorite BBQ Sauce
    1 Pkg Lipton Onion Mix
    "OR"
    1 Pkg Knoor;s French Onion Soup Mix
    2-3 Tbs Dijon Mustard
    1-1 1/2 Cup Grated Parmesan Cheese
    1-2 Cups Italian Bread Crumbs To Bind
    BBQ Rub of Choice




    Procedure:
    1 Mix all ingredients except turkey and bread crumbs. Then mix in turkey. Slowly add in portions of bread crumbs, careful not to add so many that the meatballs will be dried out. Make meatballs about 1-1 1/2 inches in diameter. Sprinkle with your favorite BBQ rub.
    BGE:
    1 Set up BGE for indirect cook at 350°F and add some smoke of choice. I used apple. Place meatballs on rack with a smaller grid pizza rack to keep the meat from falling into fire. Cook about 35-45 minutes. Can be frozen
    2 Will probably make great turkey burgers & meatloaf. If meat loaf pull at 150°F.


    Yield: 3-4 Dozen

    Dehydrated onion is the best binder I've found. I like dehydrated garlic too.

    Chiming in a little late, I know, but just catching up on the forum traffic this morning.

    Here's a great recipe that I got from Throwdown with Bobby Flay where he takes on Mike Maroni's Spaghetti and Meatballs.

    I've done the meatballs on the BGE on a slotted broiler pan and the addition of a little smoke from the lump charcoal, these are sublime.

    The sauce recipe is good, too. Very straightforward, but that makes the meatballs the star of the show.
