My Eggtoberfest tostadas

I had a number of people ask me how I made the tostadas at the fest, it is almost so simple I'm kind of embarrassed to post this but enough people have asked so here goes. Here are the ingredients I used starting with flour tortillas, Mexican cheese(Kroger brand), canned green chilies, very thinly sliced red onion, carnitas(pulled pork), and Texas Pete hot sauce.

Spread a thin layer of cheese over the tortilla, I cook these on an Air Bake pan you can get at target.

Add the red onion and green chilies.

And now the meat.

Now put just a small amount of cheese over the ingredients.

Now shake on the hot sauce.

I put it on the Egg at 400 dome, direct, and on a raised grid.

The object is to get a crispy crust and it takes 15-20 minutes, the tortilla won't burn like a pizza crust does.

Let cool slightly, cut, and enjoy. BTW, I didn't get to taste these in ATL, they are good. -RP

Sparky was trying to figure out where all the chile's/ tortill'as etc. came from that he found in his cooler. Mystery solved!
