ISP is too slow to upload pics.
Did spatch cornish hens last night and brown and wild rice. Tonight it's spatchcocked chicken and a duck with fries in duck fat. Just fried the duck liver in butter and s&p to a perfect medium. Man what a treat. Stock from the Cornish hens is simmering with the duck backbone, wings and innards. Planning on a blackberry sauce with Warren's port. I'll take the camera in to work tomorrow and try and get them up there.

Are you on dialup? I finally got a wireless modem and it's made life so much easier. From being stuck with 31200 bps at best I'm now online at 230400. Most wireless companies offer high speed internet through wireless modems, although I don't think that it occurs to them to recommend it for non-laptops.
Your meal sounds wonderful. Did you use domestic or wild duck? Duck fat is such a great thing to cook with! I did something similar with potatoes and chicken fat and rosemary sprigs recently. -

I believe I mention a while back that there is a steak house in Livingston, NJ that fries their taters in duck fat - mmmm very good! Can't wait to see the duck liver sounds delicious!

Doug,
Did the duck at 260* for two hours. Made a sauce with port, blackberry jam, fresh blackberries and herbs. I don't normally eat my own cooks but this was good. Maybe we can arrange something next summer

No no no.
We switched from sattelite, which was painful, to high speed phone. It was great for a couple of months and then it died. Probably need to spend three hours on the phone to talk to somebody from Bell in Bangaledesh.

I wonder about whether it's internet speed or some other issue. I generally have a faster connection with my work laptop at home than I do at work, but my home computer takes much longer to upload pics to photobucket (with the regular uploader or with the bulk uploader) than my work computer at work (where my connection is generally slower). Lately, my home computer is taking longer to do EVERYTHING, so I'm guessing something has clogged up the works. It's nearing the end of its life anyway, but regardless, I don't think in my case that it's the internet connection. -
I will be in Lethbridge next summer so maybe I will run into Doug out there to see how those westerner's cook.
