Delicious Ginger Chops.

Maryland had a perfect fall day today, clear, sunny and cool. Decided it was a great time for a perfect fall meal ... which of course included pig! Started with chops a little over an inch thick, acorn squash and salad. Set the CyberQ up for 360 on the large with the plate setter legs up. Added a touch of hickory and pecan chips.
Chops - Rub of fresh ginger, mixed pepper corns, fresh garlic, fresh nutmeg, siracha, salt, pepper all ground in a mortar and pestle.
Acorn Squash - butter, olive oil, dark maple syrup, ginger preserves.
Salad - red wine vinegar, olive oil, salt, pepper, blue cheese, mixed greens, arugala.
Put the squash on for about 45 minutes, then added the chops. After one hour pulled the squash and tented with foil. Pulled the plate setter off and finished the chops direct to start a char on the outside. Came out juicy and delicious. I swear fall is created for outdoor cooking!

Hopefully it tastes as good as it looks and I have no doubt it did.

Oh it was quit good! Not my normal 'bbq' flavors in the rub, but very tasty. And now we are munching on the toasted seeds from the squash... Yum!
