Carnitas from spare rib trimmings

I always trim my spare ribs St Louis style but sometimes I want to do something different with the tips instead of beans. Smoke In Da Eye BBQ mentioned making carnitas a few weeks back so I thought I'd give it a try on the Egg.
Toss rib trimmings into a #12 dutch oven on the Egg running at 350f. Top with some quartered onion, bay leaf, corriander, cumin, chili powder, bay leaf, garlic, cinnamon, and then top with 1/2 can of beer.

Cover and simmer for 2 hours, adding the remainder of the beer as it cooks down.
Shred and serve on tortillas and your favorite toppings!

That's a great idea, I have never tried that. I usualy throw mine away :ermm: I know thats stupid but I never seem to have time to save and cook later. I'm turning a new leaf today though :woohoo: Now more discarding trimmings!

I've let them go to waste once or twice too. Now, my wife vacuum seals them as soon as I trim them and saves them for later in the freezer. That works great. The ones for the carnitas were from my Labor Day ribs.Knoxville, TN

Great Idea.I always trim my ribs and cook the trimmings along side the ribs and snack on them as the ribs continue cooking.
Next time I'm going to try your carnitas..Looks great!
