Cafe Terra Cotta Chicken Mole

For many years here in Tucson one of the most beloved restaurants was the Cafe Terra Cotta. They served an eclectic kind of southwestern cuisine. Long story short they moved into a new building in a very high rent area just before the economy turned south and are no longer around. This morning I was browsing through the farmer's market and came across Terra Cotta spice blends and found out a local company is packaging products to reproduce dishes the restaurant used to serve under license of the former owner chef of Terra Cotta. I bought the Ole Mole and the Chunky Avacado Dip mixes. The Filly made the avacado dip this afternoon and it was very good, I made chicken mole tonight and here is how that went.

You heat 2 Tbs of olive oil then add the spice mixture and heat for 1 minute.

Then add 1 can of chicken broth and whisk while bringing to a boil.

I grilled a couple boneless skinless chicken breasts and some corn.

Then spooned the mole sauce over the sliced chicken, dang I left the tortillas out of the pic.

I have to know, what was your opinion of the Mole, it is my favorite sauce, but I only ever get it at a restaurant here in West Chester, and I could drink the stuff, but have no idea how to make it; it is slightly sweet, a little hot, & just unique (to me anyway, up here in the northeast), so what is the verdict?happy in the hut

Mole is kind of a pain to make and get right, this was delicious and couldn't have been easier to make. It had a hint of cinnamon and that sharp chocolate flavor. The only thing I would do different is I would only have made half of it, it was way too much sauce for two chicken breasts. I couldn't finish eating it all because I dipped and ate too many tortilla chips in it before dinner. -RP

Just bought a bunch of stuff there. I thought prices were good and could not beat the $5 shipping. I got some tea there also.

Nice! Your are right, mole is tricky to get right. I'm sure your locale mole differs greatly to this area's mole flavors.Molly

Hey Ross, the cafe was really loved by all here in Tucson, my mother loved it so much that every birthday or any other occasion was celebrated there. It was liked so much by the community that they are bringing these mixes to market. -RP

Mole is one of my favorites and the addition of chicken cooked on the BGE is a nice boost in flavor.
I usually just cut up a whole chicken because I prefer dark meat and my wife likes the breasts.

Their mole sauce was my favorite, did you think this sauce was close to the restaurant's version? -

Great Mexican food, best place I know in Tucson. Any that are better in your opinion?
