can fish sauce go bad

i see shelf lifes of 5 months to life on the web. tuna steaks tonight, want a dipping sauce. stuff i have is 3 or 4 years old, seems to look alot darker than i remember

Fish sauce is "bad" when you buy it! But your bottle may be among the baddest. My suggestion: Put what's left of your bottle in a fancy container, list it on eBay as vintage fish sauce. Then go to an Asian grocery store and spend $2 on a new bottle while you wait for the winning bid.

if the shelf life is that long, then it's an issue of freshness rather than safety, right?

You would be dark to if you were put into a kitchen cabinet or a fridge for a couple of years.I have used oyster sauce that was older than that.With all of the salt that is used in the product it might last as long as King Tut.

It lasts forever. It's dried, fermented anchovies in salt.

Mine has been in a kitchen cabinet for 12 years and it's still A-OK. No tentacles reach out and grab me when I open that cabinet door.

Not sure that this in a fair comparison, but I have at least one bottle of B V that is 30 yr. old. Some may be older can't remember s*** = CRS. Just pray and enjoy & smiles to you.

Do you have any idea how fish sauce was originally made? There's a town on the coast of Vietnam (name escapes me right now but its roughly halfway between Saigon and Nha Trang) that was a major producer back when. The standard method was to pack fish into a ceramic container and bury it for six months or a year or whatever. Then dig it up and drain the juices - that's the first quality sauce. Then press the mash and get the second quality. Then add water and press to get the cheap stuff. Believe it, this stuff does not go bad!
