My neighbor, Lucky Mon (recent winner of a medium Egg) wanted to cook some blackened trout on Lily Large today. Fine with me. Here's some of the trout cooking:

Spring Hen decided to make some Mac & Cheese using the recipe of the Egghead who was on Bobby Flay's grilling show last year.

And I wanted some cornbread so I used a recipe I ran across in the Houston Chronicle

Turned out pretty darn good and made for a delightful afternoon.

    Shared eggs can pick up some bad habits. Watch out Leroy. I don't want you having to fire an egg (although I would be willing to rehire to help the economy)

    Sure.

    Spring Hen combined a few ideas of her own with Robin Koury's (on the Grilling show with Bobby Flay) recipe. She didn't want to go to the grocery again LOL.

    Here's what she came up with for the Egg.

    Macaroni & Cheese on BGE


    Recipe By : Judy
    Serving Size : 1 Preparation Time :0:00
    Categories : Casseroles

    Amount Measure Ingredient -- Preparation Method


    1 pound Elbow macaroni
    1 teaspoon salt
    5 tablespoons butter
    6 tablespoons flour
    1 1/2 teaspoons powdered mustard
    1 teaspoon Dizzy Pig Shakin the Tree
    1/4 teaspoon cayenne
    4 cups milk
    1 can Evaporated milk
    2 cups Mild Cheddar & Monterey Jack cheese -- shredded
    1 cup Sharp cheddar cheese -- shredded
    1 7 oz btl Parmesian, Asiago, Romano Kraft -- shredded

    1/4 cup Italian bread crumbs


    Cook the Macaroni in salted water til soft. Remove from water & put aside.

    Melt 5T butter, adding flour, cayenne, Dizzy Pig, salt & mustard - stir on medium heat til slightly browned.

    Slowly whisk in cold milk so that no lumps form. (Alternate adding cheese and milk)

    Allow to thicken to a heavy cream consistency.


    Add the precooked macaroni.

    Sprinkle with the Italian Bread crumbs

    Transfer into a 9x13\" baking dish for oven. (I use stainless steel casserole pan for Egg)

    Place in an oven under the broiler til golden brown or

    PLACE ON A PLATESETTER or PIZZA STONE IN THE BGE @ 450°F and cook til golden brown.

    I thought it needed a wee bit more salt but other than that it was pretty good.

    After today I think Lucky Mon may be interested in getting his own Large. He insisted on doing the cooking.

    Notice, no smoke this time. We cooked at a lower temperature, mostly because I had the new stainless steel grate in the bottom and didn't want to stress it.

    Took longer but turned out good.

    Oh yea, we used olive oil instad of butter. I think it's the better choice for blacked fish on the Egg.

    You should have been here. You could have just sat back and watched instead of working hard like last time.
