Breakfast quesadilla

Late breakfast this morning after some yard work before it became a scorcher outside.
Ingredients

CI skillet with cut up sausage and green onions

Scrambled the eggs with the sausage and onions the added the cheese and salsa on my peel

Took out the skillet and added a pizza stone while I was assembling the quesdilla - put the Q' on after the stone was heated up

I will continue with the pictorial in a minute - I have to take a few more bites.

Okay - I'm back
After the flip

Finished - A nice cup of java to go with it

It was mightyfine - here is one I did a while back with crawfish - whoooooaaa bubba - the one with the crawfish was the best

They sure do look good.Did you wipe the dough with a little evoo on the pre cook?I noticed the parchment paper being used to cook on each side.

I just spread a little butter on each side.

Thanks.It looked as if you used something.Will have to try out that breakfast menu.I just picked up some celery sausage today and will have to give that at try on Sunday morning.

Yum! Those wedges make great appetizers too.
What is the grid resting on? It's nice and high above the gasket.

Glad to hear you are finally settling in Corpus. Still pretty close to the water huh? Is anything happening to the golf course behind you? Those pics almost gave me severe anxiety


Nice breakfast. A week from tomorrow I'll be doing a version of your cook with a bloody mary or three. This week I'm in the ER all weekend tending the world's opportunites. -
Can't you use corn meal as a lifting agent? I see you use parchment. Could make for an interesting flip.

I guess you could use cornmeal - I have always used parchment paper. Making the big move at the end of September.

I was thinking about doing something like the Q' but with crawfish - haven't decided yet.

You must be a breakfast person too. I did the same thing a few years ago at the Texas Eggfest for the Early Birds.
Only I used Southwestern Eggbeaters, pork sausage, and 4-cheese shredded Mexican cheese, along with tortillas on top and bottom. I added a wee bit of finely chopped jalapeno in a couple and I thought that was an improvement.
Here's some photos of my first attempt to see if they would be good. They were even better cooked on the Egg...





Delicious and very easy to cook.
And for you Q-Heads (Griddle Q Heads), I'm sure you would enjoy it as a Q-Breakfast.
