Usially fruit wood is best for poultry because it is milder in flavor. Careful you don't add to much smoke or you may not like what it does with turkey. I would keep it very light with a small amount of chips spread throughout the lump.

Poultry takes smoke flavor very easily so go mild with a fruit wood like apple or cherry. If you use hickory or oak, tread very very lightly with the smoke.
I just did my Apple Wood Smoked Turkey Breast last weekend and it was scrumptious!

Im with Fishless, pecan with poultry is a fav. at my house. Chicken and turkey can really suck up the smoke, go a little easy. Good luck.
