Stuffed peppers, stuffed mushrooms & beef jerky

Last night I made these bell peppers stuffed with a mixture of brown rice, sauteed mushrooms, onions and serrano peppers, ground beef seasoned with Cowlick and sauteed, smoke sundried tomatos and a shredded mexican cheese mix. This is Anne's favorite.
The mushrooms were scooped out and stuffed with brown rice, cream cheese, bacon and serrano peppers. The shrooms were seasoned with a little chile lime seasoning on the inside. Super tasty.

Here's a look inside

I had my large going all day with jerky using my method posted on the Whiz site. http://www.nakedwhiz.com/coldsmoking/coldsmokejerky.htm This was made with 3 pounds of london broil, Hi Mountain sweet and spicy cure, and ground smoked habaneros from my pal Holy Smokes. I used 3 chunks of alder. The results were very good.

I guess it is too late to offer to come over and help eat the peppers? Those are really looking good and I bet they were.

All gone Ray! Try 'em yourself. They are easy. I always change the stuffing. I often use italian sausage instead of beef. Scott

fukahwee maineyou can lead a fish to water but you can not make him drink it -
That's funny. Yes, I precooked the rice. I also use pre-cooked couscous now and then. I've used brisket in the stuffing as well. Scott
