Flat iron & grilled onion fajitas

Had a flat iron in the freezer I picked up cheap, impromptu fajita cook, but didn't have any peppers. No problem, they turned out great.

Briefly (about 1.5 hrs) marinated the steak in soy, lime, evoo, a few seasonings. Took out about an hour before cook, dried off and rubbed with cumin both sides. A little oil, s&p, and cumin on the onions.

Seared both the steak and the onions for 2 mins/ side and that was total cook time. Pulled and rested while I threw the tortillas on. Usually do onions and peppers in a grill pan or CI skillet but will definitely try this again. Onions had a great smoky, char grill flavor that added a lot to the fajitas.

The steak was done perfectly and was tender & juicy, not chewy or tough at all. Great cut for fajitas.

Plated. Wife said best fajitas I've ever made. They were really good, and a very quick & easy cook.
