Beef shoulder roast- temp drop question

Have a small roast on now about 4 1/2 hours @ 275 dome on an inverted v-rack over a drip pan with beer. Internal temp after 2 hours was 148. After 3 hours was 158. Just checked at hour 4 and it had dropped to 150?? Checked in several places with Thermapen, definitely has dropped. Plan was to pull at about 180, foil with a bit of liquid and bring it on up to 200-210.
Any thought on the temp drop? Just a plateau? Suggestions?

Temp dropped again at hour 5, now 145. I don't know what is going on!?

JB- go ahead and foil it and put in some liquid and cook to 200.
JB- I did just that, turned out pretty good. :laugh:
