Fat steak on a mini

2 inches of choice top sirloin. Cut in thirds to cook faster and easier to manage on the grill. Pretty big slab. Got mini up to 550 dome (who knows what the grid temp is)and after steaks went on cooked at 325 10minutes per side. Naturally grid temps significantly higher.
