These Hatch (supersize) ABT's are just what the Dr. ordered to fend off the "Hungrys"...
till the Apricot/Chipotl'e Spares are done!

These are done on the Small...(indirect) on a GrateMate raised grid set-up!

    They have hot and mild varieties...these are the mild ones!

    Still, even the "hot" are more on flavor than heat in my book!

    Lots of great info out there! If you've not tried them...get some!!
    They're great flame roasted...peeled, and frozen in vacume bags for the winter!

    don't want to hijack chubby's thread but Hatch is the chili capitol of the world. The Hatch chili festival is the weekend after labor day each year and is quite a festive outing. here are a few pics from the '07 fest.

    The big cookoff is sept 5-6 and it is looking pretty good. we are gonna have the captain and his son's from the Deadliest catch Cornelia Marie (capt Phil, Josh, Jake Harris) as guest judges. Smitty is a registered competitor and i wish him well, he has been instrumental in making this thing happen. we finally got "championship" status from KCBS last week and ready to go. I will post pics after the fact.

    Actually there are five different levels of hot:

    Every year a fellow trucks in 40,000 lbs into Southern Calif and sells them to pre-arranged buyers. You can get them raw or they will roast them on the spot.

    This came from a TV show here on our PBS station out of Los Angeles called California's Gold. It is by a guy name Huell Howser and he has been touring CA for 20 years finding great things to see and do.

    My wife is from Albuquerque and its about time to go see the inlaws to get a fresh batch of Hatch green chili

    I LOVEEEEE green chili. For breakfast, on a burger, green chili stew... the possibilities are endless lol

    Central Market's hatch fest starts next weekend, at least it does here in Dallas. They had some first arrivals last week and I roasted 5 pounds for the freezer. We'll pick up a case next weekend and roast them on Saturday.

    CM has a nice little Hatch cookbok that they put out last year. It's nice to pull out a frozen bag of chilies in January and make a batch of hatch chicken chilli.

    The ABT's look great.

    The methos ids liike the ABT's made with Jalepenos.

    Cut lengthwise...seed, (and remove ribs) if you want.

    Fill each side with cream cheese and insert 2-3 (very cold) coctail smokeys and press both sieds back together.

    Wrap with bacon and use a couple toothpics to hold all together.
    Sprinkle with the rub of your choosing.

    Grill indirect on a raised grid for about 50-65 minutes (or till bacon is crisp)

    Temp...350-375.

LOL. . .nice to know he still knows how to cook though. ..unless it was really ann cooking up those ABTs and chubby was just serving as the photographer!!. ..
