Was going to post this last night but ended up spending 1/2 the night in the pasture with a collicey 20 year old horse. Anyone who has had horses very long can relate. Not real fun especially trying to give the second shot of Banamean! She's much better this morning though. Had a choice of eating out or Egging last night. Guess what won out?!
First the raws.

Ever so lightly somoked the tuna at 200 with presimmon wood for about 10 min. then made my rice. Making sushi rice it needs to be rinsed till water is clear and not milky like this.

Next I spread my rice then layered my cucumber, tuna and ginger then rolled almost like the cigerets you rolled back in the old collage days.

Been soaking the cow in some yerraki for the wife. Really makes some good marks even using a regular grill.

Been raining for the last week and cooler so Sue got to come out to the Shack. She has C.O.P.D at 13 years old and lungs are slowley failing. We have to keep her inside under AC most of the time so she was enjoying this.

I think this was better than eating out! Also grilled some zuccini and squash.

Good looking cook and Tuna Roll. It's pure entertainment for me on the occasion my wife and son attempt to roll their own. Edible, just not as nice as yours. :laugh:LBGE Katy (Houston) TX

Looks great JL! I love sushi but haven't made it myself. It's one of the few things that I'll go out to a restaurant for. Nice piece of cow too, bone in ribeye is a favorite of mine.

JL,
I always enjoy your posts and pics. I was surpised to see this wasn't a caveman treatment on the cow.
Good luck with your horse and the dog.

well done JL.. how was the nigori??? your in danger of losing your redneck biker merit badge if you keep things up like this ,.. i suspect your sushi is better than what you got in hot springs... the smoked tuna is a nice touch..

How wonderful! I have never been brave enough to make my own sushi. I love that Sue has a smile on her sweet face
