When I smoke cheese it usually takes it a couple of days to "mellow" but yours sure looks good...actually just did about 5# 3 days ago..Will be in touch about the italian seasoning..

OH JOHN! you are missing a treat!~ when we go home to Pa there is a cheese factory in Troupsburg, NY that we have to hit every time, we get at least 10 pounds. they do cheddar and some other cheeses but when they have fresh curd..... it looks like mozzarella and is about the size of a pecan and shiny and irregular shaped, when you bite it it should squeak! a little salty mmmmmm and the day old when it looses its squeak it is still good, but on pizzas HEAVEN! it makes my mouth water to just think about it!

Nice job, egret. That is something I have yet to try but I'm curious, can you freeze it after the vacuum seal or does that ruin it. If not frozen, how long will it keep in the vac seal?
