The no-knead bread is very good, but I need help with baguettes, batards and such other hearth style breads?

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. 

  • A good basic book for artisan bread is Ed White's "Classic Sourdoughs."

    He also sells sourdough starter on-line; it's fine. I've been using his for a few years and sourdough generally since, dare I admit it, 1978.

    Going up a notch is Nancy Silverton's "Breads from the La Brea Bakery." Worth having as an excellent discussion and recipe source. Her "George's Seeded Sour" is in high regard here, but somewhat complicated.

    That said, I've got one of her rye breads in process today, in the second of four risings.

    Also good is Peter Reinhart's "The Bread Baker's Apprentice," but I think he relies too heavily on sprayed oil. Other than that, it's very good. The brioche recipe is excellent.

    Reinhart and Silverton's books are not specifically sourdough. Just good bread. White's book is only sourdough.

    I don't know if you've looked much but the no knead author herself has two websites. This is the one for her main book: http://www.artisanbreadinfive.com/ and this one is her website: http://zoebakes.com/ Her book site is dedicated to almost totally bread while the other has all kinds of stuff. The best thing is that she and the co-author will answer any and all posted questions!!! I've gone there myself and posted and gotten answers. It may take a few days, depending on if they are in their home base or not, but they WILL answer you, no question goes ignored. Zoe is really nice and no question is treated as a stupid one. I love the book and her website.
