I cooked some'en:Seafood alfredo New Orleans

In the spirit of our trip this summer I came up with this meal for my us and my ridding partner and his wife. This meal draws its insperation from a meal my wife ate at Coop's in New Orleans. http://www.coopsplace.net/
In New Orleans most of the stores/homes in the Quarter have the main building facing the street and then wrapps around an inside a open air court yard. At Coops's you eat/drink up front and walk threw the court yard to the rest room. As I was going to the restroom I was hit by this smell!!!!
No not of human waste but of smoke!!! Sweet,wonderful smell of smoke wood!! They had o big old Binkman smokes shoved full of mesquite wood smoking all there sausages,oysters,chicken,ect that went into there dishes.

OK Hear's the raws.

Smoked aundui,shrimp,crab meat,a talopia fellet and chicken thigh. All cut into small pieces and smoked at 225-250 with heavy presimmon wood.



Next I heated my cream and added stick of real butter till melted and bubbling then put in the paramashon cheese and stired till a nice thick sause then added my cooked meats to the brew.

Also did up some extra shrimp caoted with EVOO,salt,pepper and oragino and made a form of Egged PoBoy.


A really great meal if I do say so myself. Something differant than "regular" bbq.

Man, that is a great cook, JL! Looks like you got some inspiration on that road trip!
Meant to tell you to give me a holler if you came through Jackson on the return trip. Next time you are riding this way, give me a heads-up. -
Clark we came right threw Jackson but had it hooked straight up trying to make Wort Walton at decent time. Sometime when we arn't is such a hurry would love to! I must say this: HWY 49 between Jackson and Hattisburg has got to be the roughest road I have ever been down. I about launched the wife off the back numerous times!! :laugh: Everytime she saw that strip across the road she clamped down on me!

Looks like a wonderful shrimp po-boy to me.... You were in my neck of the woods (well 2 hours away), but I can identify with the shrimp po-boy...

There are a few re-paved spots, but I hate having to drive it. I have to get the dentist to check my fillings every time I travel on that piece of crap road!
The closest I get to you is Hot Springs and I will let you know the next time we go - it might be one of your weekends to be hanging up there. Great place. The kids just traded their ski boat for a pontoon - on Lake Hamilton. -

nice cook . and good ideas,, i have not smoked any seafood other than salmon.. smokey seafood in cream sauce, will add that to the list..looks like it was a good night in the shack
