When using the dutch oven to cook things like baked beans, do you need a plate setter? I read and seen a couple post with the plate setter in place. I have only used it a couple of times but I used it direct. Am I missing something?

If it is a cast iron DO no need for your platesetter unless you want to slow down your cook time.

I doesn't matter one way or another. If you have the camp fire style the plate setter is nice because of the feet as they don't seem to be spaced well for going through the fire great.
I don't use the plate setter, I have found a grate companion to the dutch ovens is the spider, normal position for searing and inverted for the final cook.
The only reason for the 'drip pan' is because the diameter on this particular DO is too small for the ring in the spider. My larger DO's just sit on the spider.
300° - 350° dome for me is a pretty nice temperature for a simmer in the DO.

I use the PS to keep the bottom of the DO from getting over heated causing the bottom of my brownies to burn. :laugh:

Getting too much heat around a DO is going to burn whatever is inside.
Up water skiing one time, I petrified a pot of stew one time with the DO buried underground with some fire embers in the bottom of the pit. I never thought I could burn the food with that setup.
I am sure the indirect heat is more helpful with baking. However, there has been a lot of baking done in DO's over the years over just plane old campfires.
That's one of the beauties of the DO.
The DO will work both ways PS or not. Other than one time I haven't used the PS with the DO or any CI. But that's me. Other than upside down pineapple cake and a hunters breakfast, appleskeivers, dumpling type cooks, I haven't done much baking or baking related CI cooks.
I think Broc uses one all the time when he is baking.
