Dutch Oven Ideas

Hey folks, I have been really enjoying my new Lodge D.O., making beans, biscuits, cobblers, brownies, even a pound cake.
Anyone have any good suggestions for other dishes? Would love to see some pics.

PS. Here are the beans I did not so long ago. A couple people had asked for the recipe. Sorry for the delay.
Ingredients.
8 Slices Bacon
1 Large Onion, chopped coarsely
1/2 Cup Cider Vinegar
1 packed cup Brown Sugar
1 teaspoon kosher salt
1/2 teaspoon Garlic Powder
1 teaspoon ground Mustard
1/2 Cup Strong Black Coffee (or tea)
1 L Can Baked Beans undrained (28oz)
1 Can Kidney Beans drained (150z)
1 Can Pinto Beans drained (150z)
1 Can Butter Beans drained (150z)
1 Can Black Eyed Peas drained (150z)
Cook bacon until crispy, crumble after cooling
Drain grease, retaining 2-3 tablespoons in skillet
Add onions, cook until tender.
Add Vinegar, mustard, garlic, salt, sugar and stir.
Bring to a boil.
All Ingredients into 4 or 5Qt Dutch Oven
Place Dutch Oven In Big Green Egg (indirect)
Cook 4 hours at 350 -400

Hey Ron,buddy,good to see ya again man Here's an easy one for ya :ohmy: First,brown some diced onions:
Then add a jar of sauerkraut,a can of beer,and some bratwurst
Then,after simmering for a while ,tickle your kid
Then throw the bratwursts over the fire to make them pretty :P -
My favorite: Pot Roast with carrots, potatoes and onions. Great flavor and fall-apart tender. Many good recipes in the forum recipe section.Larry

For the Forth of July I cook jambalya in a Dutch Oven on my BGE, it comes out great and everybody loved it.
Here's how I made it:
2 chicken breast, 4 boneless thighs, 4 links sausage
Cook the chicken and sausage on the BGE on grid direct method. Remove the meat and place on side for later.
Set the egg up indirect with place setter and pizza stone, temp at 380*
On you stove top:
In the dutch oven brown 6 cups onions, some bell peppers, and celery until clear in a stick of butter.
Add chicken and sausage. A little salt and pepper and some of your favorite Cajun seasoning. Simmer and then add 3 cups uncooked rice add 4 cups water and 1 can chicken broth. Now add 6-8 toes chopped garlic.
Stir and bring to a boil. Place Dutch oven in BGE on the pizza stone and cook uncovered for 1 hour.
If you want smokey flavor you can use a little pecan wood for no smoke flavor then use the lid on the dutch oven.
Note: the pictures do not show the set-up using the plate setter and stone. I didn't take pictures the time I used the indirect method , it did come out better using with the indirect set-up.

Sparky its good to see Carson is doing well. We need to get him and Mary Kate together soon. I pulled a muscle in my side this afternoon throwing her into the air. I guess I need to stop that now that has reached 50lbs.

Thanks Ron,and I agree.I think that they would have fun BTW:Those pics were from Carson's 6th B-day,and the tickleling is a very important step for cooking bratwurst :P We'll get together soon buddy

here is one that i love i actually brought it to the nge event at kims house last year
Chili, Cornbread, Pie
When I got home last night there was nothing in the fridge but some suspect hot dogs and wilted carrots.... and after searching through the kitchen for a while, things weren't looking too promising for dinner.Opening the freezer, there it was ..... a quart of chili made a couple months back... and looking through the cupboards, there was fixins for cornbread. I like cornbread with chili and having remembered seeing a recipe for combining the two, I thought I'd wing it.
1/2 chopped onion
~ 1 14 oz. can creamed corn
about 1/2 cup of milk
1 cup grated sharp cheddar cheese
dollop of mayo (no eggs and couldn't think what else to use)
about 1.5 cups of yellow cornmeal
3 tsp baking powder
1 Fill the bottom of a 12" cast iron skillet with about a quart of chili.
2 Mix well. Try to keep the mixture from getting too thick or too thin..... it should just pour out of the bowl.
3 Evenly pour over the chili and bake until brown on top.
4 Have a moment of silence for the greens, crack a PBR and eat.

i changed it a bit after i made it a couple times i added browned hamburger meat to the chili because i think my chili was too runny.. i also cube some chedder cheese and push it into the cornbread mix after i pour it over the chili!!
this was my first one notice how the chili has boiled up to cause discoloration in the cornbread
here is one i did later i was much happier with the outcome
give it a shot when you get time

How about braising some short ribs in the Dutch Oven? I see you have an Egg foot in your picture, did you raise the Dutch Oven off of the plate setter with a couple of feet? :huh:

I plan to cook a pot of red beans Sunday. This will be the first time on the Egg. It should be a very simple cook.
