I saw Beli's post and it sounded great. I used dizy pig Swamp Venom.

I cooked at 500 in butter for about a minute per side.

The one without any venom is for my daughter. My son wants it spicier next time!
Everyone loved it. I had to stop and get more for this weekend.

They cooked to fast. I got doing the finishing of the sides and did not get any more pics. I will take some on my next ones this weekend.

Try to find Paul Prudhomme's Blackened Redfish seasoning (narrow tall jar). It is by far the best for blackening fish.

Those were in a 600* dry cast iron skillet about 2-3 minutes per side.
