First time Beef Ribs

4.5-lbs. Beef Ribs

Put some Dizzy's Red Eye Express on them

On the Egg at 250* dome temp. indirect

At hour 2 I added 2 backers at 5-hrs I foiled them and added Carnivor Bold.

Off the Egg at 6-hrs.


Served with baked potatoes with butter, sour cream, chives and bacon bets and baked beans and salad. Very Tasty

I did 12# on the 4th and found it very difficult to remove the membrane without butchering them... seemed to be in 2 layers. Guess I'll have the meat guy do it next time..

Good cook. Were the ribs meaty ? My concern is finding beef ribs with meat on them. How long were the ribs on the EGG ?

Wow those were heavily trimmed before you got them. I have a place here who gets them in cryo and they are untrimmed, frozen but not trimmed. They look great.

I really hate the packing house beef back ribs. They trinm them so close and leave the meat on the boneless rib eye at 2x the price per pound.
I perfer short ribs and they can be bought whole.
