Well it is the weekend, so that means atleast one overnighter it seems lately. After trimming the butts of the fat cap and figuring out the best way to put them on Geometrically, these three 7.5 pounders fit well on the Large with atleast 1/4 inch between them and the dome. They went on at 9 pm EST, and the Egg was cruising at 220 grate when they went on. Went with Frenchs then generous amounts of Butt Rub. Topped them all very generously with some Turbinado Sugar before I tucked them in for the night. These porkers will be takin a trip to the beach tomorrow, and need their beauty rest.

Doesn't this first picture just look like she is wanting some serious meat to cook?

Birds of a feather. I just put on 2 8 pounders about a half hour after you.

Good luck to you on yours....

Shaking my head at myself. For some silly reason I played with the vents and have been chasing the temp ever since. Now the dome is a tad over 300. How much is it going to change the final result?

It wont...happens to EVERYONE! Even the pros...which I am not one of.

You have been cookin all night, they have been Egged and will taste incredible! Problem is you need some good rest. In this situation, go to your oven and get it baking at 200 degrees. Double foil your picnics real good, and finish them off there. I guarantee that you have not changed your results in the least bit.

Go get some rest. Using the oven at this point is NOT cheating. You did the tough part. Well....the egg did.
